French Onion Chicken

A comforting dish combining juicy chicken, sweet caramelized onions, and melty Gruyère cheese, inspired by childhood memories.

  • 4 boneless skinless chicken breasts (or thighs)
  • 2 large yellow onions, sliced
  • 2 tablespoons butter (or olive oil)
  • 1 cup beef broth (or low-sodium chicken broth)
  • 1 cup Gruyère cheese, shredded (or Emmental)
  • 1 teaspoon fresh or dried thyme
  • Salt and pepper to taste

Instructions

  1. Caramelize the onions: In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced onions and pinch of salt. Cook for about 30 minutes until golden brown and sweet.
  2. Cook the chicken: Season the chicken breasts with salt and pepper. In a separate pan, heat 1 tablespoon of butter and sear the chicken for about 5-7 minutes on each side.
  3. Combine and bake: Preheat oven to 375°F (190°C). In a baking dish, layer the chicken, top with onions, pour in beef broth, and add Gruyère cheese. Cover with foil and bake for 25 minutes, then remove foil and bake for another 10-15 minutes until cheese is bubbly and golden.

Notes

Try adding rosemary or sautéed mushrooms for variations. This dish can be made ahead of time; just add extra baking time.
