Crispy Dill Pickle Parmesan Chicken

A delightful balance of tangy dill pickles and crispy chicken coated in Parmesan and breadcrumbs, perfect for family dinners or gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate the chicken: Place chicken breasts in a shallow dish, pour dill pickle juice over them, cover, and refrigerate for at least 30 minutes.
  2. Prepare the coating: In one bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper. In a second bowl, whisk together eggs. In a third bowl, mix breadcrumbs and Parmesan cheese.
  3. Coat the chicken: Remove chicken from pickle juice, dredge in flour mixture, dip in egg wash, and coat with breadcrumb mixture.
  4. Heat the oil: In a skillet, heat about 1/2 inch of cooking oil over medium-high heat.
  5. Fry the chicken: Place coated chicken in hot oil, frying for 4-5 minutes on each side or until golden brown.
  6. Drain and rest: Transfer chicken to a plate lined with paper towels to absorb excess oil and let rest for a few minutes.
  7. Enjoy: Serve hot with your favorite sides.

Notes

For a healthier option, bake instead of fry at 400°F for 20-25 minutes. This dish can also be adapted for air fryers.
