Pumpkin Alfredo Pasta

A warm and comforting pasta dish featuring a creamy pumpkin Alfredo sauce, perfect for fall.

  • 8 oz Fettuccine
  • 1 cup Pumpkin puree
  • 1 cup Heavy cream
  • 1 cup Freshly grated Parmesan cheese
  • 2 cloves Garlic, minced

Instructions

  1. Cook the Fettuccine: Start by bringing a large pot of salted water to a boil. Once boiling, toss in your fettuccine and cook according to package instructions until al dente. Remember to reserve about a cup of the pasta water before draining!
  2. Sauté the Garlic: While your pasta cooks, grab a large skillet over medium heat. Add a drizzle of olive oil and toss in minced garlic. Sauté for about 1-2 minutes until fragrant.
  3. Make the Alfredo Sauce: Pour in the heavy cream gradually into the skillet with the garlic. Stir it continuously for about 3-4 minutes.
  4. Incorporate the Pumpkin: Now, add your pumpkin puree to the mixture! Stir it in until well combined.
  5. Cheese It Up: Gradually sprinkle in the grated Parmesan cheese, stirring until melted and combined.
  6. Season to Perfection: Taste your sauce and season with salt and freshly cracked black pepper.
  7. Combine with Pasta: Add the drained fettuccine right into the sauce and toss it all together until every noodle is coated.

Notes

Serve with extra Parmesan and a sprinkle of chopped parsley or sage for added flavor and color.
