Creamy Low Carb Chicken Casserole with Broccoli and Bacon

A comforting casserole with tender chicken, crispy bacon, and vibrant broccoli enveloped in creamy, cheesy goodness. Perfect for weeknight dinners!

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for about 2-3 minutes. Drain and rinse under cold water.
  3. In a large skillet over medium heat, cook the chopped turkey bacon until crispy, about 5-7 minutes.
  4. Add the minced garlic to the skillet and sauté for about 30 seconds.
  5. Combine the cooked chicken, sautéed garlic, blanched broccoli, crispy bacon, cheddar, mozzarella, and ranch dressing in a large mixing bowl.
  6. Grease a 9×13 inch baking dish and spoon the mixture into it.
  7. Sprinkle the remaining shredded cheddar and mozzarella over the top.
  8. Bake for about 25-30 minutes, or until the cheese is bubbling and golden brown.
  9. Let it cool before serving.

Notes

Customize the recipe by adding seafood or spice, or making a vegetarian version with chickpeas.
