  • 2 large chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh basil (for garnish, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the chicken by mixing it with olive oil, salt, pepper, and Italian seasoning.
  3. Chop the zucchinis and halve the cherry tomatoes.
  4. Combine the marinated chicken, sliced zucchinis, halved tomatoes, and minced garlic in a mixing bowl.
  5. Layer the mixture in a greased 9×13 inch baking dish.
  6. Add the shredded mozzarella and grated Parmesan on top.
  7. Bake for 30-35 minutes or until chicken is cooked through and cheese is bubbly.
  8. Broil for 2-3 minutes for extra crispiness if desired.
  9. Garnish with fresh basil before serving.
