Bruschetta Chicken Pasta

A flavorful dish that combines the vibrant flavors of bruschetta with hearty pasta, featuring juicy chicken, ripe tomatoes, and aromatic basil.

Ingredients

  • Pasta of your choice (penne or fusilli recommended)
  • Chicken breast
  • Fresh tomatoes (heirloom or vine-ripened)
  • Basil
  • Olive oil (extra virgin)
  • Garlic (fresh minced)
  • Salt
  • Pepper
  • Parmesan cheese (optional)

Instructions

  1. Cook the pasta: Boil salted water and cook pasta according to package instructions until al dente (8-10 minutes). Save some pasta water for the sauce.
  2. Prep the chicken: Season chicken with salt and pepper, heat olive oil in a skillet, and cook chicken (6-7 minutes on one side, then flip and cook for another 5-6 minutes). Slice after resting.
  3. Make the bruschetta topping: In the same skillet, add more olive oil, sauté minced garlic for 30 seconds, then add chopped tomatoes, salt, and pepper. Cook until softened (5-7 minutes).
  4. Combine everything: Toss cooked pasta into the skillet with tomato mixture. Add reserved pasta water if needed, then include sliced chicken and fresh basil.
  5. Plate and serve: Transfer to bowls or a platter and sprinkle with fresh Parmesan if desired.

Notes

For a vegetarian option, replace chicken with grilled zucchini. Add red pepper flakes for heat or cream cheese for a creamy twist.
