Hearty Beef & Butternut Squash Chili

A cozy, delicious chili made with ground beef and sweet butternut squash, perfect for chilly evenings.

  • 1 lb lean ground beef
  • 2 cups butternut squash, cubed
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup beef broth or water (optional)

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, and cut the butternut squash into cubes.
  2. Cook the aromatics: Heat olive oil in a large pot, sauté onion until translucent, then add garlic.
  3. Brown the ground beef: Add beef to the pot, breaking up as it cooks for 6-8 minutes.
  4. Add the butternut squash and spices: Stir to combine and cook for 1–2 minutes.
  5. Stir in tomatoes and beans: Combine diced tomatoes with juice and drained beans, mix well.
  6. Simmer to perfection: Bring to a boil, reduce heat, cover pot, and simmer for 25–30 minutes.
  7. Taste and adjust: Check flavor and adjust seasoning as needed.
  8. Serve it up: Ladle chili into bowls and garnish as desired.

Notes

Chili tastes even better the next day! Refrigerate overnight for deeper flavors.
