Balsamic Pot Roast

  • 2.53 lbs Chuck Roast
  • 4 Carrots, chopped
  • 1 cup Balsamic Vinegar
  • Salt and Pepper, to taste
  • 4 Garlic cloves, minced
  • 2 Onions, diced
  • 2 cups Beef Broth

Instructions

  1. Sear the chuck roast in a hot pot for 4-5 minutes on each side until browned.
  2. Remove the roast and sauté onions and garlic in the same pot for 2-3 minutes.
  3. Add chopped carrots and stir for about 2 minutes.
  4. Pour balsamic vinegar into the pot and scrape up browned bits.
  5. Bring the seared roast back to the pot, add beef broth, and season.
  6. Cover and simmer on low for 3-4 hours until tender.
  7. Serve the roast sliced or shredded with carrots and broth.

Notes

For added flavor, consider using fresh herbs or adding a bit of sugar to the balsamic vinegar.
