Autumn Harvest Pasta

A cozy and flavorful pasta dish celebrating the tastes of autumn with crispy Brussels sprouts, smoky bacon, and tart cranberries.

Ingredients

  • Pasta (Fusilli or Penne)
  • Brussels Sprouts
  • Bacon or Pancetta
  • Cranberries (Dried)
  • Garlic
  • Olive Oil
  • Parmesan Cheese
  • Salt & Pepper

Instructions

  1. Prep Your Ingredients: Start by washing your Brussels sprouts thoroughly. Trim the ends and slice them in half. If you’re using bacon, chop it into bite-sized pieces. Mince your garlic and set aside everything for easy access.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta of choice and cook it according to package instructions until al dente. Remember—don’t forget to reserve about 1/2 cup of pasta water before draining; it’s liquid gold for your sauce!
  3. Sauté the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, stirring occasionally (about 5-7 minutes). Once done, transfer the bacon to a plate lined with paper towels, leaving the delicious drippings in the skillet.
  4. Roast the Brussels Sprouts: Add the halved Brussels sprouts to the same skillet. Sauté them in the bacon fat for about 8-10 minutes, stirring until they’re golden and tender. Note that you can add a splash of water to help steam them if needed!
  5. Add Garlic and Cranberries: Once the Brussels sprouts are beautifully caramelized, toss in the minced garlic and dried cranberries. Cook for another minute until fragrant—a little tip: keep your eye on the garlic; it can burn quickly!
  6. Combine Pasta and Sauce: Return the cooked pasta to the skillet, along with the reserved pasta water and crispy bacon. Toss everything together to coat. If the pasta seems dry, add more reserved pasta water as necessary.
  7. Finishing Touches: Drizzle with olive oil, season with salt, pepper, and red pepper flakes if using, and stir in freshly grated Parmesan cheese to melt into the warm pasta.
  8. Taste and Adjust: Before serving, taste and adjust the seasoning. Everyone’s palate is different, and this is where you can make it your own!

Notes

Serve garnished with extra Parmesan cheese and fresh herbs. Store leftovers in an airtight container in the fridge for 3-4 days.
