Baked Breakfast Tacos

  • 4 slices bacon
  • 2 tablespoons canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2 ½ tablespoons taco seasoning mix
  • 8 soft corn tortillas (6-inch)
  • 8 eggs, well beaten
  • ½ cup shredded Monterey Jack cheese (2 oz)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the bacon slices in a skillet until crispy, about 5-7 minutes.
  3. Sauté the cubed potatoes in the skillet with canola oil and taco seasoning for about 10-12 minutes.
  4. Warm the tortillas in foil in the oven or in a dry skillet until soft.
  5. Combine the cooked bacon and sautéed potatoes in a bowl, and stir in the beaten eggs.
  6. Assemble the tacos by placing the filling in the tortillas and cheese on top, folding them to shape.
  7. Bake in the oven for 15-18 minutes until golden and bubbly.
  8. Serve with your choice of toppings like avocado or salsa.
