Pumpkin Streusel Muffins

Delicious Pumpkin Streusel Muffins that are fluffy, moist, and topped with a sweet, crunchy streusel, perfect for cozy fall mornings.

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup streusel topping (made with flour, butter, and brown sugar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin with paper liners or grease it.
  3. Combine pumpkin puree, vegetable oil, brown sugar, and granulated sugar in a large bowl, mixing until smooth. Chef’s Tip: If using fresh pumpkin, drain excess moisture.
  4. Add eggs and vanilla extract, whisking until blended.
  5. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  6. Fold dry ingredients into the wet mixture gently until just combined.
  7. If using chopped nuts, fold them in now.
  8. Mix streusel ingredients in a small bowl until crumbly.
  9. Scoop batter into muffin tin, filling each cup 2/3 full, and top with streusel.
  10. Bake for 18-22 minutes until a toothpick comes out clean.
  11. Cool muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins are best served warm and can be enjoyed with butter, cream cheese, or maple syrup. Perfect for fall gatherings!
