Decadently Delicious Chocolate Chip Zucchini Bread

A moist and delightful zucchini bread loaded with semisweet chocolate chips, combining the richness of chocolate with the goodness of zucchini.

  • 1½ cups All-Purpose Flour
  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 pinch Nutmeg
  • 1 whole Egg
  • ½ cup Canola Oil
  • ½ cup Light Brown Sugar, Packed
  • ½ cup Sugar
  • ½ cup Plain Greek Yogurt
  • 1 teaspoon Vanilla Extract
  • 1 cup Zucchini, Shredded
  • 1 cup Semi-Sweet Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchini using a box grater.
  3. In a large mixing bowl, combine the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a separate bowl, whisk together the granulated sugar, brown sugar, and canola oil until smooth.
  5. Add in the whole egg and vanilla extract. Beat until well combined.
  6. Fold in the Greek yogurt, making sure it’s well incorporated.
  7. Gently fold the dry ingredients into the wet mixture.
  8. Add the shredded zucchini and chocolate chips.
  9. Transfer the batter into your prepared loaf pan.
  10. Pop your loaf into the oven and bake for about 50-60 minutes.
  11. Let it cool in the pan for about 10 minutes then remove and cool completely on a wire rack.

Notes

For a vegan option, use a flax egg. You can freeze the bread for up to 3 months.
