Chocolate Chip Banana Oatmeal Cookies

Delicious soft and chewy cookies made with ripe bananas, almond butter, and chocolate chips—a healthier twist on a classic treat.

  • 2 large ripe bananas, mashed (approx. 3/4 cup mashed)
  • 1/2 cup almond butter (can sub peanut butter)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups rolled oats (gluten-free if needed)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chocolate chips
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a medium bowl using a fork.
  3. Mix in the almond butter and maple syrup until smooth.
  4. Stir in the vanilla extract until thoroughly mixed.
  5. Add the rolled oats, salt, and cinnamon (if using) and combine well.
  6. Fold in the chocolate chips and walnuts gently.
  7. Line a baking sheet with parchment paper.
  8. Scoop the dough onto the prepared baking sheet, about 2 inches apart.
  9. Bake for 12-15 minutes or until the edges are golden brown.
  10. Cool on the baking sheet for a few minutes and then transfer to a wire rack.
