Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apples (peeled and diced)
  • 1 teaspoon cinnamon
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 cup all-purpose flour (for streusel)
  • 1/4 cup unsalted butter (for streusel)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven: Set your oven to 350°F (175°C).
  2. Prepare the pan: Grab a 9×13-inch baking dish and grease it with butter or cooking spray.
  3. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  4. Cream the butter and sugar: In another bowl, mix the softened butter and granulated sugar together until creamy. Add the eggs one at a time, beating well after each addition. Then, stir in the vanilla extract.
  5. Combine wet and dry ingredients: Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  6. Fold in the apples: Gently fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
  7. Make the streusel: In a small bowl, combine the rolled oats, brown sugar, flour, and butter for your streusel topping.
  8. Assemble: Pour the cake batter into your prepared pan, spreading it evenly. Then sprinkle the streusel topping over the batter.
  9. Bake: Pop it into the oven and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  10. Prepare the glaze: While the cake is baking, combine the powdered sugar, milk, and vanilla extract until smooth.
  11. Cool and drizzle: Once the cake is out of the oven, let it cool in the pan for about 10 minutes before drizzling the glaze over the top.
