No-Bake Pumpkin Balls

Delicious and effortless no-bake pumpkin balls bursting with fall flavors, perfect for cozy gatherings.

Ingredients

Scale
  • 4 oz cream cheese (softened)
  • 2 Tbsp powdered sugar
  • 1/3 cup pumpkin puree
  • 2 cups graham cracker crumbs
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 cups white chocolate chips
  • 12 tsp coconut oil (optional)

Instructions

  1. Prepare Your Ingredients: Start by making sure your cream cheese is softened; this will make it easier to blend.
  2. Mix the Base: In a large mixing bowl, combine the softened cream cheese and powdered sugar. Blend until smooth and creamy.
  3. Incorporate the Pumpkin: Gently fold in the pumpkin puree, pumpkin pie spice, and cinnamon into the cream cheese mixture.
  4. Add the Graham Cracker Crumbs: Gradually stir in the graham cracker crumbs until the mixture is thick enough to roll into balls.
  5. Chill the Mixture: Cover your bowl with plastic wrap and refrigerate for about 30 minutes.
  6. Shape the Pumpkin Balls: Once chilled, roll the mixture into balls (about 1 inch in diameter) and place on a parchment-lined baking sheet.
  7. Melt the Chocolate: Melt the white chocolate in a double boiler or in the microwave.
  8. Coat the Balls: Dip each pumpkin ball into the melted chocolate and place back on the parchment-lined baking sheet.
  9. Let Set: Allow the chocolate coating to set at room temperature or in the fridge.
  10. Dig In: Once the chocolate is set, enjoy your no-bake pumpkin balls!
