No-Bake Chocolate Mousse Bars

  • 24 chocolate sandwich cookies (like Oreos)
  • 5 tablespoons unsalted butter, melted
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/4 cups heavy whipping cream, divided
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Whipped cream and chocolate shavings (optional)

Instructions

  1. Preheat your oven to 350°F if desired for a slight crisp. Alternatively, you can chill the crust without baking.
  2. Place the chocolate sandwich cookies in a food processor and pulse until finely crushed.
  3. Combine the crushed cookies with melted butter. Mix until the cookie crumbs are slightly wet.
  4. Press the cookie mixture evenly into the bottom of a lined 9×9-inch baking dish.
  5. Melt the chocolate chips in a medium saucepan over low heat, stirring often.
  6. Beat the softened cream cheese in a large mixing bowl until smooth. Add powdered sugar and vanilla, then combine.
  7. Pour the melted chocolate into the cream cheese mixture and fold gently.
  8. Whip 1 cup of heavy cream until soft peaks form, then fold into the chocolate mixture.
  9. Pour the mousse mixture over the cookie crust and refrigerate for at least 4 hours.
  10. Slice into squares and serve with whipped cream and chocolate shavings if desired.
