  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. Prep the blueberry mixture: Toss the blueberries into a small saucepan over medium heat. Add lemon juice and optional cornstarch. Cook for 5-7 minutes until softened, creating a chunky sauce. Set aside to cool slightly.
  2. Combine the yogurt base: In a mixing bowl, combine Greek yogurt, honey/maple syrup, lemon juice, and vanilla extract. Mix until smooth and creamy.
  3. Layer the swirls: Spoon the yogurt mixture into molds, add a dollop of blueberry mixture, then swirl gently with a toothpick.
  4. Freeze for 4-6 hours or until fully set.
  5. Pop out of the molds and store in a zip-top bag or airtight container in the freezer.

Notes

For dairy-free, substitute Greek yogurt with your favorite plant-based yogurt. Variations include adding different fruits, nuts, or a chocolate drizzle.
