  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Chop your ripe nectarines into bite-sized pieces and set aside.
  3. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  4. Cream together the softened butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then pour in the vanilla extract.
  6. Gradually add your dry ingredient mix to the creamed mixture, alternating with the milk.
  7. Fold in the chopped nectarines gently.
  8. Pour the batter into your prepared cake pan and bake for about 30-35 minutes.
  9. Cool the cake in the pan for about 10 minutes before transferring to a wire rack.
