Homemade Nectarine Bread

A delightful twist on classic bread with juicy nectarines, perfect for a snack, breakfast, or dessert.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 23 ripe nectarines, diced
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a standard 9×5 inch loaf pan by greasing it with butter or nonstick spray.
  3. Mix the dry ingredients: whisk together flour, baking soda, salt, and ground cinnamon in a large bowl.
  4. Cream the softened butter with brown sugar and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, and pour in the vanilla extract.
  6. Combine the dry ingredients with the wet mixture, mixing just until combined.
  7. Fold in the diced nectarines gently to avoid mashing.
  8. Pour the batter into the prepared loaf pan, smoothing the top.
  9. Bake for 60-70 minutes until a toothpick comes out clean.
  10. Cool the bread in the pan for about 10 minutes before transferring to a cooling rack.
  11. Prepare the glaze by whisking together powdered sugar and milk until smooth.
  12. Drizzle the glaze over the cooled bread and enjoy!

Notes

Serve warm or at room temperature. Pairs well with whipped cream or vanilla ice cream.
