French Nectarine Blueberry Galette

A buttery, flaky galette bursting with juicy nectarines and blueberries, capturing the essence of summer in every bite.

  • 1 cup blueberries
  • 2 ripe nectarines, sliced
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 recipe cream cheese pastry
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Start with the Cream Cheese Pastry: In a bowl, combine 1 ½ cups of all-purpose flour and 1 tablespoon of sugar. Add in 8 oz of cold cream cheese (cubed) and 1 stick of cold butter (cut into pieces). Using a pastry cutter or your fingers, mix until it resembles coarse crumbs.
  2. Chill Your Dough: Gather your dough into a ball, flatten slightly into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.
  3. Preheat Oven: Turn on your oven to preheat to 400°F (200°C).
  4. Prepare the Fruit Filling: In a large bowl, gently toss together the blueberries, sliced nectarines, sugar, vanilla extract, and cornstarch. Let it sit for about 10 minutes.
  5. Roll Out the Dough: Once chilled, roll it out into a rough 12-inch circle and transfer it to a baking sheet lined with parchment paper.
  6. Assemble the Galette: Spoon your fruit mixture onto the center of the dough, leaving about 2 inches of space around the edges. Fold the edges of the dough up and over the fruit.
  7. Egg Wash Time: Brush the exposed dough with the beaten egg and sprinkle with coarse sugar.
  8. Bake: Bake for 35-40 minutes, or until golden brown. Keep an eye on it while baking!
  9. Let it Cool: Once baked, let it cool for about 10 minutes before slicing.

Notes

Serve with fresh whipped cream or vanilla ice cream. You can also garnish with fresh mint for added color.
