Zesty Antipasto Artichoke Salad

A vibrant and delicious salad featuring artichokes, cherry tomatoes, olives, salami, and mozzarella, perfect for potlucks or casual gatherings.

  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/2 cup mozzarella cheese, cubed

  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Gather and prep your ingredients. Drain and chop the artichoke hearts, halve the cherry tomatoes, slice the olives, dice the salami, and cube the mozzarella.
  2. Mix the Base: In a large mixing bowl, combine the chopped artichokes, cherry tomatoes, olives, salami, mozzarella, and red onion. Use a spatula to fold the ingredients together.
  3. Add Freshness: Toss in the fresh basil and fold it into the salad gently.
  4. Dress the Salad: Drizzle olive oil and balsamic vinegar over the salad. Whisk them together first for a harmonious dressing.
  5. Season to Taste: Sprinkle salt and pepper over your salad, and taste to adjust seasoning.
  6. Chill (Optional): Let the salad sit for 15-30 minutes in the fridge if time allows to meld the flavors.

Notes

This salad can be made ahead of time; just leave out the mozzarella until serving to keep it fresh.
