Simple Watermelon + Cucumber + Feta Salad

A delightful summer salad combining sweet watermelon, crisp cucumber, and creamy feta, perfect for picnics or light dinners.

  • 6 cups watermelon (seeded and cubed)
  • 1 English cucumber (chopped)
  • 6 oz feta cheese (cubed)
  • Handful of chopped fresh mint leaves
  • 1 fresh lime (zest and juice)
  • Sea salt flakes and fresh ground black pepper (to taste)

Instructions

  1. Prep your ingredients: Wash the fruits and veggies under cool water.
  2. Cube the watermelon: Slice in half, then into manageable quarters, and cut into cubes.
  3. Chop the cucumber: Peel (if desired) and chop into ½-inch pieces.
  4. Cube the feta cheese: Cut into bite-sized cubes.
  5. Mint, please!: Chop fresh mint leaves, roughly three to four per handful.
  6. Zest and juice the lime: Grate the green skin and then cut in half to juice it.
  7. Mix it all together: In a large mixing bowl, combine watermelon, cucumber, and feta with mint, lime juice, and zest.
  8. Toss gently: Use a spatula to mix without breaking the feta.
  9. Chill before serving: Let it rest in the refrigerator for about 30 minutes.
  10. Taste test: Adjust seasoning before serving.

Notes

Consider using a large platter for serving or individual bowls, and top with extra mint leaves and olive oil.
