Ingredients

  • Rice paper wrappers
  • Cooked chicken breast, shredded
  • Rice vermicelli noodles
  • Lettuce leaves
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Carrots, julienned
  • Cucumbers, julienned
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Prepare your ingredients: Start by gathering all your ingredients and laying them out on a clean surface.
  2. Cook the rice vermicelli noodles: Follow package instructions to cook the rice vermicelli noodles, then drain and rinse under cold water.
  3. Set up a rolling station: Get a shallow dish with warm water and have a clean cutting board or plate ready.
  4. Soften the rice paper wrapper: Dip the wrapper into warm water for about 10–15 seconds, then place it on your cutting board.
  5. Layer the ingredients: On the lower third of the wrapper, add lettuce, vermicelli noodles, shredded chicken, julienned carrots, cucumbers, mint, and cilantro.
  6. Roll it up: Fold the bottom of the wrapper over the fillings, then fold in the sides and roll tightly.
  7. Repeat: Continue this process with the remaining wrappers and ingredients until everything is used up.
  8. Presentation time: Lay assembled rolls seam-side down on a platter.

Notes

Serve fresh with a side of peanut or hoisin sauce for dipping. You can sprinkle crushed peanuts or sesame seeds for extra flair.
