  • 1 cup shredded cheese (Monterey Jack and cheddar blend)
  • 4 flour tortillas (or corn/whole wheat for gluten-free option)
  • Olive oil
  • Salt, pepper, and favorite spices (like cumin and paprika)

Instructions

  1. Cook the turkey: In a large skillet over medium heat, add olive oil. Toss in the ground turkey, season with salt, pepper, and spices; cook until browned and cooked through, about 5-7 minutes.
  2. Add the spinach: Stir in the fresh spinach until wilted, about a few moments.
  3. Mix in the cheese: Turn off the heat and mix in the shredded cheese, allowing it to melt.
  4. Assemble the quesadilla: Heat a non-stick pan over medium heat, place a tortilla, add the turkey-spinach-cheese mixture on one half, and fold it over.
  5. Cook until golden: Cook for 3-4 minutes on each side until golden brown and cheese is melted.
  6. Serve and enjoy: Slice into wedges and serve with salsa, guacamole, or sour cream.

Notes

Feel free to experiment with different cheese blends or add veggies like bell peppers or mushrooms. Extra crispy tortillas can be achieved by brushing olive oil on the outside before cooking.
