Homemade Peach Cobbler Muffins

Delicious muffins filled with juicy peaches and topped with a crumbly streusel, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups peaches, diced
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour (for streusel topping)
  • 1 tablespoon butter (for streusel topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin pan or line it with muffin liners.
  3. Mix the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  4. Combine the melted butter, milk, eggs, and vanilla extract in another bowl.
  5. Pour the wet mixture into the dry ingredients, gently folding them together.
  6. Fold in the diced peaches into the batter.
  7. Prepare the streusel topping by mixing the brown sugar, flour, and melted butter until crumbly.
  8. Spoon the batter into each muffin cup, filling them about two-thirds full.
  9. Add the streusel topping generously over each muffin.
  10. Bake for about 18-20 minutes or until a toothpick comes out clean.
  11. Cool for about 5 minutes in the pan before transferring to a wire rack.

Notes

These muffins are best enjoyed warm; serve with whipped cream or vanilla ice cream for an indulgent treat.
