Spinach Mushroom Pasta

A comforting and flavorful pasta dish with sautéed mushrooms and fresh spinach, perfect for cozy weeknight dinners.

Ingredients

  • Pasta (spaghetti, fettuccine, or your favorite type)
  • Mushrooms (cremini, shiitake, or button)
  • Spinach (fresh or frozen)
  • Parmesan cheese
  • Garlic (2-3 cloves, minced)
  • Olive oil (or butter)
  • Salt and pepper (to taste)

Instructions

  1. Boil the Pasta: Start by bringing a large pot of salted water to a rolling boil. Once boiling, add your pasta and cook according to package instructions, usually around 8-10 minutes for al dente.
  2. Sauté the Mushrooms: While the pasta cooks, heat a splash of olive oil over medium heat in a large skillet. Add the minced garlic and sauté until fragrant. Toss in the sliced mushrooms and sauté for about 5-7 minutes until golden brown.
  3. Add Spinach: Once the mushrooms are browned, add the spinach. Stir and cook until the spinach wilts down.
  4. Combine Pasta and Sauce: Reserve ½ cup of pasta water, drain the rest, and add the drained pasta to the skillet. Pour in the reserved pasta water, season with salt and pepper, and toss everything together.
  5. Finish with Parmesan: Sprinkle in the grated Parmesan cheese and stir until melted and creamy.
  6. Plate & Serve: Scoop the pasta into a serving bowl, add more Parmesan on top, and garnish with cracked black pepper or herbs.

Notes

For an extra touch, consider adding a splash of truffle oil or serving with crusty bread and a salad.
