A vibrant and refreshing summer salad featuring juicy peaches, blueberries, crunchy cucumber, and creamy feta, perfect for picnics or light dinners.

Ingredients

  • 2 cups fresh spinach or mixed greens
  • 1 cup blueberries
  • 2 ripe peaches, sliced
  • 1 cucumber, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Prep the Greens: Wash your fresh spinach or mixed greens under cold water and gently dry.
  2. Slice the Peaches: Cut peaches in half, remove pit, and slice thinly, tossing with lemon juice to prevent browning.
  3. Slice the Cucumber: Cut cucumber into thin rounds or half-moons.
  4. Prepare the Blueberries: Rinse blueberries under cold water and set aside.
  5. Crumble the Feta: Crumble feta cheese into small pieces over the salad.
  6. Make the Dressing: Combine olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl and whisk until blended.
  7. Assemble the Salad: In a large bowl, layer greens first, followed by peaches, cucumber, blueberries, and feta.
  8. Dress Your Salad: Drizzle dressing over salad and toss gently to combine.
  9. Taste and Adjust: Adjust flavors with salt, pepper, or honey as desired.

Notes

Best enjoyed fresh, but ingredients can be prepared in advance. Store greens separately for optimal crispness.
