  • 2 cups tart cherries, pitted
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pie crust (store-bought or homemade)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup cold butter, cubed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the pitted tart cherries, sugar, cornstarch, vanilla extract, and lemon juice.
  3. Roll out the pie crust into your pie dish.
  4. Pour the cherry filling into the prepared crust.
  5. Mix the flour, brown sugar, oats, cinnamon, and salt for the crumble topping.
  6. Cut in the cubed cold butter until it resembles coarse crumbs.
  7. Sprinkle the crumble topping over the cherry filling.
  8. Bake for about 35–40 minutes, or until golden brown and bubbling.
  9. Cool for at least 20 minutes before serving.
