Pumpkin Pecan Cobbler

A heartwarming dessert that celebrates fall flavors with pumpkin and crunchy pecans, all tucked under a sweet topping.

  • 1 cup + 3 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves in a medium bowl.
  3. Mix the pumpkin puree, milk, melted butter, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Grease a 9×9-inch baking dish and pour the batter into it, spreading evenly.
  6. Mix the topping sugars and sprinkle over the batter.
  7. Sprinkle the chopped pecans over the top.
  8. Carefully pour the very hot water over the mixture without stirring.
  9. Bake for 40-45 minutes, or until golden brown and a toothpick comes out clean.
  10. Remove from the oven and cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream. A sprinkle of cinnamon or extra chopped pecans adds a nice touch.
