  • 1/2 cup pumpkin puree
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round or square baking pan by greasing and flouring it.
  3. Mix the dry ingredients (flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg) in a medium bowl.
  4. Combine the pumpkin puree, sour cream, eggs, and melted butter in a large bowl.
  5. Gradually add the dry mixture to the wet ingredients and fold gently.
  6. Fold in the rolled oats and nuts.
  7. Transfer the batter into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
