Instructions

  1. Prep your ingredients (10 minutes): Gather all your ingredients. Dice the pineapple and let fresh ones sit to enhance sweetness.
  2. Cucumber slicing (3 minutes): Use a knife or mandoline slicer for thin slices. Salt the cucumber and let sit to remove excess water.
  3. Mix the dressing (5 minutes): Combine lime juice, olive oil, honey, salt, and black pepper in a bowl and whisk until emulsified.
