  • 2 cups Fresh Pineapple (diced)
  • 1 large Cucumber (thinly sliced)
  • 1/4 Red Onion (finely sliced)
  • 1/2 teaspoon Chili Powder
  • 1 lime (juiced)
  • 1 tablespoon Honey or Maple Syrup
  • 1/4 teaspoon Salt
  • Fresh Cilantro or Mint (chopped)

Instructions

  1. Prepare the Pineapple: Cut off the top and bottom, slice off the skin, remove the core, and dice into bite-sized pieces.
  2. Slice the Cucumber: Use a sharp knife to slice thinly.
  3. Finely Slice the Red Onion: Slice thinly, consistent in size.
  4. Mix the Dressing: Whisk together lime juice, honey (or maple syrup), chili powder, and salt.
  5. Combine the Ingredients: Toss pineapple, cucumber, and onion together, then drizzle dressing and mix gently.
  6. Add Herbs: Fold in chopped cilantro or mint.
  7. Chill and Serve: Allow salad to sit in the fridge for 15–20 minutes before serving.

Notes
