Easy Peach Cobbler Muffins

Deliciously moist muffins packed with fresh peaches, perfect for summer snacking or breakfast.

  • 2 cups fresh peaches, peeled and diced
  • 2 cups (240 g) all-purpose flour
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113 g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 cup (120 ml) milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • Cinnamon sugar topping: 1/4 cup granulated sugar and 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the muffin tin by greasing or lining it with paper liners.
  3. Mix the dry ingredients in a large bowl: flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  4. Combine the wet ingredients in a separate bowl: whisk melted butter, eggs, milk, and vanilla until smooth.
  5. Fold in the peach pieces gently into the wet mixture.
  6. Combine the wet and dry mixtures, stirring just until combined.
  7. Scoop the batter evenly into the muffin tins, filling each cup about 3/4 full.
  8. Sprinkle cinnamon sugar over the muffin tops.
  9. Bake for 18 to 20 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Best enjoyed warm with butter or vanilla ice cream. Store in an airtight container for up to three days.
