Peanut Butter and Jelly Sandwich Cookies

  • ½ cup Creamy Peanut Butter
  • ¼ cup Plus 2 Tablespoons Granulated Sugar
  • ¼ cup Plus 2 Tablespoons Light Brown Sugar
  • 1 whole Egg
  • 2½ Tablespoons Milk
  • ½ teaspoon Vanilla Extract
  • 1¼ cup All-purpose Flour
  • ¼ teaspoon Baking Powder
  • ¼ teaspoon Baking Soda
  • 2 Tablespoons Vodka
  • 2 drops Brown Food Coloring
  • ¼ cup Jelly (flavor of your choice)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the wet ingredients: In a mixing bowl, combine the creamy peanut butter, granulated sugar, brown sugar, and egg. Mix until smooth and creamy.
  3. Add milk and vanilla extract; stir until well combined.
  4. Sift together the flour, baking powder, and baking soda in a separate bowl. Gradually add the dry mix to the wet mix, stirring gently until just combined.
  5. Incorporate vodka and food coloring, mixing gently.
  6. Chill the dough in the refrigerator for about 30 minutes.
  7. Scoop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space in between. Bake for 10-12 minutes.
  8. Cool the cookies for about 5 minutes on the sheet before transferring them to a wire rack.
  9. Spread jelly onto the bottom of half of the cookies and top them with the remaining cookies.

Notes

Serve cookies dusted with powdered sugar or drizzled with chocolate for an elegant touch.
