Mushroom and Tofu Stir-Fry

A quick and vibrant Mushroom and Tofu Stir-Fry loaded with flavor and nutrients, perfect for busy weeknights.

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 cups of mushrooms, sliced
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 3 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • Salt and pepper to taste
  • Optional: mixed vegetables (bell peppers, broccoli, snap peas)

Instructions

  1. Prepare the tofu by pressing it to drain excess moisture for 15-20 minutes.
  2. Cube the tofu into bite-sized pieces.
  3. Sear the tofu in a skillet with 1 tablespoon of oil for 5-7 minutes until golden brown.
  4. Sauté minced garlic and grated ginger in the same skillet for 30 seconds.
  5. Add the sliced mushrooms and optional mixed veggies, sautéing for 5-7 minutes.
  6. Combine everything, drizzling with soy sauce and sesame oil, and toss for 2-3 minutes.
  7. Serve hot over jasmine rice or quinoa, garnished with sesame seeds and green onions.

Notes
