Loaded Taco Potato Soup

A creamy, hearty soup that combines the zesty flavors of tacos with comforting potatoes.

Ingredients

  • 1 lb Ground Beef
  • 4 Yukon Gold Potatoes, diced
  • 2 tbsp Taco Seasoning
  • 1 cup Cheddar Cheese, shredded
  • 4 cups Chicken or Vegetable Broth
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • Optional Add-Ons: Sour cream, sliced green onions, jalapeños, tortilla chips

Instructions

  1. Sauté the Ground Beef in a pot over medium heat for about 5-7 minutes, until browned.
  2. Add the Aromatics: toss in onions and garlic; sauté for 2-3 minutes.
  3. Stir in Potatoes, coating them lightly with the mixture.
  4. Pour in the Liquid: add broth and bring to a boil, then simmer for 15-20 minutes.
  5. Season with Taco Spice: mix in taco seasoning and let simmer for another 5 minutes.
  6. Cheesy Goodness: stir in cheese until melted and creamy.
  7. Final Touches: taste and adjust seasonings; garnish before serving.

Notes
