  • 2 chicken breasts (boneless and skinless)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. Prepare the chicken: Pat the chicken breasts dry with a paper towel and season with salt and pepper.
  3. Sear the chicken: In a skillet, heat olive oil over medium-high heat. Add chicken and sear for 5-7 minutes on each side. Remove and let rest before slicing.
  4. Sauté the garlic: In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  5. Add lemon and broth: Lower heat, add lemon zest and juice, and chicken broth. Let it simmer for 2 minutes.
  6. Combine everything: Add cooked pasta and reserved pasta water to the skillet. Toss in sliced chicken and mix until hot.
  7. Garnish and serve: Season with salt and pepper and sprinkle fresh parsley on top.

Notes

For a vegetarian option, substitute chicken with sautéed mushrooms or zucchini. Add chickpeas for extra protein.
