Ingredients

  • Lemon Cake Mix (1 box, 15.25 oz)
  • Cream Cheese, softened (4 oz)
  • Unsalted Butter, softened (1/4 cup)
  • Egg, room temperature (1 large)
  • Vanilla Extract (1 teaspoon)
  • Powdered Sugar (for rolling, ½ cup)
  • Butter (2 tablespoons, for glaze)
  • Powdered Sugar (for glaze, 1 cup)
  • Milk (2-3 tablespoons)
  • Vanilla Extract (1/2 teaspoon)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cookie dough in a large bowl by combining the lemon cake mix, cream cheese, butter, egg, and vanilla extract.
  3. Chill the dough in the refrigerator for about 30 minutes.
  4. Roll the dough into balls and coat each in powdered sugar.
  5. Bake on a parchment-lined baking sheet for about 10-12 minutes.
  6. Cool the cookies on the baking sheet for 5 minutes before transferring to a rack.
  7. Make the glaze by whisking melted butter, powdered sugar, milk, and vanilla extract until smooth.
  8. Glaze the cookies by drizzling or dipping each in the glaze.

Notes

Chill the dough before baking to prevent spreading.
