Italian Wedding Soup

A warm and comforting bowl of Italian Wedding Soup featuring tender turkey meatballs, vibrant spinach, and pasta in a rich chicken broth.

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves minced garlic
  • 1 tablespoon olive oil
  • 1 diced onion
  • 1 carrot diced
  • 6 cups low-sodium chicken broth
  • 1 cup small pasta (orzo or acini di pepe)
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Additional grated Parmesan cheese for serving

Instructions

  1. Combine 1 pound of ground turkey, 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 egg, 2 minced garlic cloves, and a sprinkle of Italian seasoning in a large bowl. Roll into small meatballs, about 1 inch in diameter, and set aside.
  2. Heat a tablespoon of olive oil in a large pot over medium heat. Add the meatballs in batches, browning them on all sides for about 5-7 minutes, then remove and set aside.
  3. Add a diced onion, 2 cloves of minced garlic, and a diced carrot to the same pot. Sauté for about 5 minutes until the vegetables are tender.
  4. Pour in 6 cups of chicken broth and bring to a simmer. Return the meatballs to the pot and let everything bubble for 15-20 minutes.
  5. Toss in 1 cup of pasta and cook for another 8-10 minutes until al dente.
  6. Stir in 2 cups of fresh spinach until wilted. Adjust seasoning and serve with additional grated Parmesan cheese on top.

Notes

Consider pairing with garlic bread for a cozy meal. Feel free to swap spinach for kale or Swiss chard, and add other veggies like zucchini for a heartier soup.
