  • 4 cups all-purpose flour
  • 1 packet (2¼ teaspoons) active dry yeast
  • 1¾ cups warm water (about 110°F)
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 2 tablespoons dried Italian herbs (like basil, oregano, thyme, and rosemary)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Extra flour for dusting

Instructions

  1. Activate the yeast: In a small bowl, combine warm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy.
  2. Mix the dry ingredients: In a large bowl, whisk together flour, salt, and dried herbs.
  3. Combine wet and dry mixtures: Pour yeast mixture into the flour mixture and mix until a shaggy dough forms.
  4. Knead the dough: Transfer the dough onto a floured countertop and knead for 8-10 minutes until smooth and elastic.
  5. Bulk fermentation: Place kneaded dough in oiled bowl, cover with a damp cloth, and let it rise for 1-2 hours until doubled in size.
  6. Shape the bread: Punch down the risen dough, fold in the mozzarella and Parmesan, and shape it into a loaf.
  7. Second rise: Place the shaped dough on a greased baking sheet, cover, and let it rise for 30-45 minutes. Preheat the oven to 375°F (190°C).
  8. Bake to perfection: Bake for 25-30 minutes until golden brown.
  9. Cool and serve: Let the bread cool on a wire rack for 10 minutes before slicing.

Notes

For a spicy twist, add crushed red pepper flakes to the herb mix. Store the bread in a paper bag at room temperature for up to 3 days.
