Garlic Butter Zucchini Skewers

Delicious garlic butter zucchini skewers, perfect as a side dish for any meal.

  • 2 medium zucchinis, sliced
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice

Instructions

  1. Preheat your grill or skillet to medium-high heat.
  2. Prepare the zucchinis by slicing them into ½-inch thick rounds or half-moons.
  3. Make the garlic butter by combining butter, minced garlic, and olive oil in a small saucepan over low to medium heat.
  4. Season the zucchini slices in a bowl with salt, pepper, and lemon juice.
  5. Skewer the zucchini onto wooden skewers, leaving space between each piece.
  6. Brush the garlic butter generously onto the skewered zucchinis.
  7. Grill the skewers for about 8-10 minutes, turning occasionally, until tender and marked.
  8. Give them a final brush of garlic butter before serving.

Notes

Try adding fresh herbs to the garlic butter for additional flavor. Serve warm with your favorite dish.
