Easy Fruit Pizza

A delightful and colorful dessert perfect for any occasion, featuring a soft cookie crust topped with cream cheese and assorted fresh fruits.

  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (again)
  • Assorted fresh fruits (strawberries, kiwis, blueberries, bananas)

Instructions

  1. Prepare the Oven: Preheat your oven to 350°F (175°C).
  2. Mix the Dry Ingredients: In a mixing bowl, whisk together the flour, brown sugar, baking powder, and salt until well combined.
  3. Cream the Butter: In a separate bowl, beat the softened butter until it’s light and fluffy.
  4. Combine & Blend: Gradually add your dry mixture to the creamed butter, mixing until just combined.
  5. Shape the Crust: Spread the dough onto a greased pizza pan or a baking sheet lined with parchment paper.
  6. Bake: Pop the crust into the preheated oven and bake for 12-15 minutes or until lightly golden.
  7. Cool Down: Once baked, remove it from the oven and allow it to cool completely.
  8. Prepare the Cream Cheese Layer: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Spread it Out: Once cooled, spread the cream cheese mixture evenly over the cooled crust.
  10. Load Up on Fruit: Slice your assorted fruits and arrange them on top of the cream cheese layer.
  11. Chill (Optional): Refrigerate your fruit pizza for about 30 minutes if not serving right away.
  12. Slice & Serve: Cut into wedges or squares, and serve immediately.

Notes

For added sweetness, drizzle honey on top before serving. Feel free to experiment with different fruits and toppings.
