  • 4 slices cooked bacon (crumbled)
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs (plain or seasoned)
  • Oil (for frying)

Instructions

  1. Prepare your ingredients by gathering everything and cooling the mashed potatoes.
  2. Mix the mashed potatoes, cheddar cheese, bacon, chives, garlic powder, pepper, salt, egg, and flour in a bowl until combined.
  3. Shape the mixture into bite-sized balls about 1.5 inches in diameter.
  4. Coat each ball in breadcrumbs.
  5. Heat oil in a skillet over medium heat until hot.
  6. Cook the bites for 4-5 minutes on each side until golden brown.
