Spinach Artichoke Soup

A cozy and creamy bowl of Spinach Artichoke Soup that brings warmth and nostalgia.

  • 4 cups fresh Spinach, chopped
  • 1 can Artichoke Hearts, drained and chopped
  • 8 oz Cream Cheese
  • ½ cup Parmesan Cheese, freshly grated
  • 4 cups Vegetable Broth
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp Lemon Juice

Instructions

  1. Prepare Your Ingredients: Gather all your ingredients and chop the onion and garlic.
  2. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion and cook until translucent. Stir in garlic and sauté until fragrant.
  3. Add Spinach and Artichokes: Toss in spinach and let it wilt. Then, add artichoke hearts and mix well.
  4. Pour in the Broth: Add vegetable broth, stir, and bring to a simmer for 10 minutes.
  5. Creamify It: Add cream cheese and stir to incorporate until melted.
  6. Cheese, Please!: Stir in Parmesan cheese until melted and simmer for another 5 minutes.
  7. Season to Perfection: Off heat, season with salt, pepper, and lemon juice, adjusting to taste.
  8. Blend (Optional): Blend for a creamier texture if desired.
  9. Serve It Up: Ladle into bowls and top with additional Parmesan and herbs if desired.

Notes

This soup can be made a day in advance and stored in the fridge. It freezes well for up to 3 months.
