Creamy Carrot Ginger Soup

A cozy, velvety soup made with earthy carrots and zesty ginger, perfect for chilly evenings.

  • 1 lb Carrots, chopped
  • 2 inches Fresh Ginger, minced
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Cream
  • Salt and Pepper to taste

Instructions

  1. Prep the vegetables by washing and peeling the carrots, then chopping them into 1-inch pieces. Finely chop the onions and garlic, and mince the ginger.
  2. Sauté your aromatics in a large pot with olive oil over medium heat. Add onions first, cooking until translucent, then add garlic and ginger until fragrant.
  3. Add the chopped carrots and broth to the pot. Season with salt and pepper, bring to a gentle boil, then simmer for 20-25 minutes until the carrots are tender.
  4. Blend the soup until smooth using an immersion blender or in batches in a countertop blender.
  5. Stir in the cream, adjusting seasoning as needed.
  6. Serve the soup warm, garnished with fresh herbs if desired.

Notes

You can substitute cream with coconut milk for a dairy-free option or add spices for a different flavor.
