Cowboy Cornbread Crisps

A crunchy twist on the classic Southern cornbread, perfect for snacking or serving alongside chili.

  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the dry ingredients: cornmeal, baking powder, and salt in a large bowl.
  3. Combine the wet ingredients: beat eggs, whisk in buttermilk and melted butter until smooth.
  4. Mix the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Add in the cheddar cheese, crumbled bacon, and chopped green onions.
  6. Prepare a baking sheet lined with parchment paper or lightly greased.
  7. Bake for about 20-25 minutes until golden, and a toothpick inserted comes out clean.
  8. Cool for a few minutes before cutting into squares or triangles.
