Chicken Taco Bowl

A delicious and customizable Chicken Taco Bowl bursting with flavor, perfect for weeknight dinners or gatherings.

  • 1 pound Chicken (boneless, skinless breasts or thighs)
  • 1 cup Rice (white or brown)
  • 1 can Beans (black, pinto, or kidney)
  • Salsa (store-bought or homemade)
  • Toppings (shredded lettuce, diced tomatoes, avocado, cheese, lime)

Instructions

  1. Prepare the Rice by rinsing 1 cup under cold water. Boil 2 cups of water, add a pinch of salt and rice, then simmer covered for 15-20 minutes.
  2. Cook the Chicken by cutting it into bite-sized pieces. Heat olive oil in a skillet and sauté with taco seasoning for 6-8 minutes until cooked through.
  3. Heat the Beans in a small saucepan with hot sauce for about 5 minutes until warmed through.
  4. Assemble your Bowl starting with rice, then add chicken, beans, salsa, and your choice of toppings.

Notes

Feel free to customize toppings based on your preferences. Serve with lime wedges and tortilla chips for a complete meal.
