Poor Man Husband Casserole

A cozy, flavorful ground beef casserole with noodles and cheese that’s perfect for busy weeknights.

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 8 oz egg noodles
  • ½ cup sour cream
  • ½ cup cottage cheese
  • 2 cups shredded cheddar cheese (divided)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef and diced onion in a large skillet over medium heat until browned and onions are translucent, about 7-10 minutes.
  3. Add the minced garlic, salt, black pepper, and Italian seasoning; cook for another 2-3 minutes.
  4. Incorporate the tomato sauce and drained diced tomatoes, simmering for about 5 minutes.
  5. Cook the egg noodles according to package instructions until al dente, drain and set aside.
  6. Assemble the casserole by mixing the beef mixture, egg noodles, sour cream, and cottage cheese in a large bowl.
  7. Transfer the mixture to a greased 9×13 inch baking dish, topping with remaining cheddar cheese.
  8. Bake for 25-30 minutes, until the cheese is bubbly and golden.
  9. Let it cool for 5 minutes before serving.

Notes

Top with parsley or green onions for garnish. Serve with salad or bread.
