Pumpkin Pie Cupcakes

  • 4 ounces cream cheese, softened
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract (for frosting)
  • 8 ounces cream cheese, softened (for frosting)
  • 1/4 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Mix dry ingredients: In a large bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. Combine wet ingredients: In another bowl, mix eggs, brown sugar, and granulated sugar until blended. Add pumpkin puree, vegetable oil, milk, and vanilla extract; blend until smooth.
  4. Combine dry & wet ingredients: Gradually add the dry mixture to the wet ingredients, mix until just combined.
  5. Scoop & fill: Fill each cupcake liner about two-thirds full.
  6. Bake: Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool down: Let cupcakes cool in the pan for 5 minutes before transferring to a wire rack.
  8. Frosting: Beat together cream cheese, butter, and sugar until creamy. Add vanilla extract and pinch of salt; mix until fluffy.
  9. Frost the cupcakes once cooled generously with cream cheese frosting.
  10. Decorate: Optionally sprinkle with cinnamon or crushed graham crackers.
