Spooky Mummy Peppers

Delightful Halloween Mummy Peppers stuffed with a savory rice and vegetable filling, perfect for spooky celebrations!

  • 4 small bell peppers (orange, yellow, or green)
  • 1 cup cooked rice (white, brown, or jasmine)
  • 1/2 cup mushrooms, finely chopped
  • 1/2 cup green onions, sliced
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp ginger powder or 1 tbsp fresh ginger, minced
  • 1 cup shredded cheese (mozzarella, cheddar, or vegan cheese)
  • Black olives, sliced (for eyes)

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse the bell peppers and slice off the tops while removing the seeds and any membranes inside.
  2. Combine the cooked rice, finely chopped mushrooms, green onions, soy sauce, garlic powder, and ginger in a mixing bowl.
  3. Stuff each bell pepper with the rice mixture, packing it in tightly.
  4. Sprinkle the shredded cheese generously over each stuffed pepper.
  5. Wrap strips of pastry dough around the top to resemble mummy bandages, leaving space for the olive eyes.
  6. Bake in the preheated oven for about 30 minutes, then remove the foil and bake for an additional 10-15 minutes.
  7. Press the black olive slices onto the top of each pepper for the eyes once baked.
